香港飮食文化 - 奶茶

在溫哥華想歎杯道地港式奶茶,要花心機去尋覓,唐人街的老店「X石」已成追憶,還幸列治文有幾間店舖的港式奶茶算做得不錯。
港式奶茶要做得好不容易!水溫、茶葉配搭、撞茶力度、焗茶時間等,全都要掌握得恰到好處。 太太去學做港式奶茶,回來興奮的跟我分享竅門: 水要滾、幼茶葉和粗茶葉8/2比例、拉茶3次、茶坐熱焗15分鐘、茶和奶3/1比例, 就能冲出一杯又香濃又嫩滑的奶茶來。善解人意的我, 當然明白她說話裡暗藏「你識點做」的玄機。
大清早, 二話不說就跑到廚房, 鷄手鴨腳地依足竅門去弄茶。說真的, 看似簡單, 做起來卻不平凡。 是時候給太太品嘗一下。 一如大家所料, 太太對我的「作品」反應不似預期.....卻又不好意思問她意見, 太太吃過早餐只冷冷向我道: 「甜心, 別忘清理好廚房啊」。看來真要加把勁多練習, 不要再令她失望。在學滿師前, 我唯有繼續外判 「老闆, 茶走一杯!」。
